Just Do It!

What a great day! Riding out of Eastland County on 717 towards Palo Pinto was the best way to spend a Sunday afternoon with my husband. We rolled down the windows and set off for no particular place to go and were pleased to not really end up anywhere but home!

The weather made me hungry for easy outside food, like sandwiches and iced tea. So that was the menu for lunch. We just pulled off the side of the road at a lovely spot. With a good breeze and the best chicken salad I could spread on rye bread, it was a feast for us. I have included the recipe for my grape filled chicken salad in my cookbook; "Out of the Box and Into the Kitchen". The book should be out by this summer and I will give you more details as we get closer to the publishing date.

Through the rest of the week, it looks to be warmish, but very windy, so take care! High profile vehicles often fight the crosswinds. Again, we are in a Burn Ban zone for our area so be on the alert for smoke and flames..

It is just about too pretty to be sitting here typing away about the weather. Frankly, I think I am about ready to go outside and play in the 75 degree wonderland I call home.Central Texas took a hard hit just a few days ago. Snow, ice and sleet covered not only this part of the state but most of my life.
