Being from South Louisiana, I love to cook...So, I am always looking for another good dish to serve my family. If any of you have any favorite recipes you would like to share...Here is the place to do it. I was very blessed to have grown up around a lot of very good cooks and Dorothy is still one of my favorites...
Dorothy's Tomato Sauce for Meatballs, Chicken or Mushrooms
3 onions, 1 whole pack celery, 8 pods garlic (Chop all fine)
1/2 canola oil to coat bottom of heavy pot
3 cans tomato paste (3 cans paste to 3 cans water per can = 9 cans water
2 cans tomato Sauce (2 cans sauce to 2 can water)
3 bay leaves
2 tsp ground basil
2 tsp oregano
2/3 c sugar
Saute chop greens in oil...cook till wilted
Add 3 cans tomato paste and 9 cans water to greens ...cook down....
Add tomato sauce & water to above and cook down
Add bay leaves, ground basil, oregano and sugar
Cook sauce on low to med. heat for one and half hours
